This is such an easy recipe to make; it’s healthier than regular fries, and it’s delicious! All you need are 2 zucchinis, a 1/2 Cup of breadcrumbs, a 1/2 cup of Parmesan cheese, 1 egg white, and 1/4 cup of milk!
Mix your egg white in a bowl and add in the 1/4 cup of milk. Stir these together. Mix your breadcrumbs and Parmesan cheese in another bowl.
Slice your zucchinis thinly – remember to chop off the top and the tail too! Dip the zucchini slices first in the milk and egg mix and then into the breadcrumbs.
Lay these out evenly on a baking tray and bake them at 425 degrees for about 25 or 30 minutes! If you want to add a bit of flavor sprinkle these with chile powder, turmeric, and garlic powder!
Once they are cooked, serve by themselves as a snack with garlic aoli dip or as part of a regular meal!
